Now we're getting to the good stuff, the inflating! Or expanding if you prefer.Using the joint tool is definitely the easier of the two methods I'll be talking about. First, pose your model in a rough position of the pose you want (if they're gonna be standing up, have them standing up. If they're gonna be lying down, have them lying down etc.). Then:
1. whip out that Joint tool from the tool gun menu on the right
2. point it at your model and right click
3. open up the context menu with "C" and go nuts
If you gotten this far, you should see a white rectangle with a lot of bone names in it. Clicking on these names will display a menu for each individual bone where you can change the size, shape and orientation of that bone with many dials. Sometimes, messing around with the dials won't do anything noticeable, but most of the time it will. The only thing to do now is to mess around with these dials and find out what each one does (if you're not sure). Once you've found the bones and the dials for the bones you need, just grow,shrink and move them around until it looks just right.
If this doesn't make much sense to you, try it out on your own! Trust me, with stuff like this it's easier to learn from experience than an online tutorial, but this is a great way to get started!

How do I pose the model properly? Every time I pick one, it's limp on the ground (ragdoll).

Thanks for the tips! I was wondering, have you found a way to save the changes made with the joint tool between sessions? Right now if I save a world and load it, all of the changes I made with the joint tool have disappeared.

Sorry to say, but I don't think there's a way to save changes with joint tool. I'm pretty sure you have to do it all in one session. Sorry about that.
