Description
I'm in a Fry mood, so of course you get more Fry things. I decided to write down some notes on them/their anatomy, along with a sketchy little diagram to help out a bitRelated content

They can't! They're completely blind and navigate using their other senses, primarily smell

There's a lot wonky about this so I'll just get angry at a behavior:
"Can only absorb meat, and hates eating people, so struggles finding meals."
Given the areas you have depicted this slenderman in, they are in an urban area roaming the streets and breaking into buildings, if this is the case, there should be TONS of things, both dead and live, that mr.starvesalot can devour in order to nourish themselves, such as: Rats, Mice, Insects, Stray Cats, Stray Dogs, Racoons, Birds, Restaurant Dumpsters, Fridges, Convenience Stores, and Vending Machines to name a few sources of meat(restaurants still throw out uneaten meals, including meat to avoid cross-contamination, and some venders have jerky.)
Unless this creature has the metabolism of a leaking jet engine, it shouldn't be this emaciated.
The only way this creature could be suffering from this severe of malnourishment against his will is if he were confined in a secure facility devoid of pests and pets, or he's living in the cleanest city known to mankind.

You make a great point! They do actually have a faster metabolism than normal (thanks to their size and strength), and they feel just as bad about eating pets as they do humans.
They do often raid dumpsters, but not everything there can be eaten, as highly processed meats will make them sick. They gotta be careful and will really only turn to it if they can't find a meal somewhere else.
They won't be skinny forever and will put on weight once they get more comfortable with the fact that, whether they like it or not, they need to eat rats and people and pets to survive.

Metabolism doesn't increase when a creature is bigger, as it refers to how many calories per kilogram of that creature needs to keep running, you're thinking of the creature as a whole, most often, metabolism actually decreases the larger you are.
As for metabolism contributing to strength, that's not exactly true, I do know this character is fictional but I'll still be using my understanding of the world to get angry at it:
Yes, in ectotherms, they do tend to be weaker and slower when they're cold as their muscles are stiffened until they warm up, the same can even be tested in humans by cooling your finger significantly.
However, it doesn't matter how much of a metabolism you may have, your muscles aren't able to exert any more force after a certain point, humans don't have stiff muscles and are well past the point where they need to warm up in order to become stronger, us warming up more isn't going to make us stronger.
So I think a better reasoning is: you don't need a hummingbird's metabolism to explain their strength, that metabolism would simply supply those muscles with enough energy to perform more exhaustive feats for longer periods of time, it doesn't cause strength itself, but can most certainly fuel it if those muscles are physically capable of pulling that hard, otherwise, metabolism doesn't play much of a part other than keeping that muscle warm and flexible.
To push past the maximum strength achievable via human muscles would require a different muscular composition, creating the necessary proteins, enzymes and collecting the necessary materials for different muscles can be a more expensive or just a different process that would have its own weaknesses and strengths.

Interesting! Thank you for explaining that for me, I'm not the best with biology. I just like to try to explain my characters and sometimes, I get things wrong. I do think it would be in that last little bit then (because they are much, much stronger than a human), I just didn't really know how it would go about happening. I just thought more strength=more energy
