Okay, here's my theory: Elsa's powers unlaced the dress' fabric thread by thread, coated them in magic ice, then reconstructed it as she imagined it in the form of her ice dress.
P.S. Love the reverence. Olaf is a wonderful Kronk.

You know, I wondered that too. You know, along with never explaining how Elsa can suddenly make a living being out of snow and then do it again (withΒ Marshmallow)Β when she was obviously confused when confronted with Olaf not minutes prior. Huh. I know it's Disney, but some explanation might have been nice.

It is possible that she used her ice powers to transform her coronation gown into an ice dress.
In layman's terms: particles blended together can come a new material so its ice fabric which is in fact, fabric infused with ice and the ice really transformed the fabric's appearance,atoms and some random crap.

My headcanon:
Elsa, while in her room, has developed a new, flexible, fabric-like ice. It is incredibly thin and is basically made of hair-thin strands of ice knotted together. However, this ice is strong, the kind she makes her castle out of, so it won't break.
